Cold-pressed or virgin coconut oil is made from fresh coconut flesh without much heat, so it keeps a light, sweet coconut aroma. Below about 24°C it sets white: that is normal for pure oil.
In the kitchen
- Light frying: good for cooking on a medium flame. For very hot deep-frying, pick another oil.
- Baking: use it instead of butter in cakes, cookies or pitha.
- Coconut flavour: a spoonful lifts prawn malaikari or vegetables cooked with coconut.
For care
- Hair oil: massage a little into the scalp half an hour before your bath.
- Skin and lips: a thin layer on dry hands, feet and chapped lips in winter.
- Make-up remover: a little on cotton wool wipes it away gently.
One caution
Coconut oil is high in saturated fat, so in cooking use it in moderation, alongside other oils.
